Q: How long can you leave hot foods out of the refrigerator after cooking?

 A. After cooking hot foods they should be refrigerated within a two hour time frame. If the food has been sitting out for more than two hours they should be thrown away. Food borne illness can be caused by even the smallest amount of contaminated food.

Q: How long can I keep leftovers refrigerated?

 A. Leftovers generally may be kept in the refrigerator safely for up to three to five days. If it does not smell right, or look right i.e., slimy, cloudy or has growth, "Throw" it away. One thing  you could do to make sure that you eat the leftovers in the correct time frame, keep a permanent felt tip marker handy and as they go in the refrigerator write the date on the wrap. If you use a plastic container put a piece of freezer tape on the plastic container and write on the tape. It is better to be safe, than SICK!
