  Pumpkin–Date, Nut Bread-Mimi's Pumpkin Bread

Ingredients:

4 egg whites

2/3 cup water

1/2 cup Canola Oil

2-cup pumpkin or 15 oz. can

31/2 cup all-purpose flour

1 1/2 cup brown sugar

1 1/2 cup granulated sugar

2 tsp. baking soda

1/2 tsp. salt

1 tsp. Cinnamon

1 tsp. Nutmeg

1/4 tsp. Clove

1/2 cup each of chopped walnuts, raisins, dated and candied cherries

Preheat oven 350 degrees, spray or oil and flour a 10-inch tube pan or 2 loaf pans. Set aside. In large mixing bowl, combine flour, salt and baking soda. Add the spices, mix. Blend sugar, water, oil and egg whites, add pumpkin. Then your flour mixture. Mix well. Pour in tube or loaf pans. Bake for 1 - 1/2 hrs. Pumpkin bread is done when toothpick comes out clean, or a few crumbles of cake. Slice, and Serve with a dollop of light whipped topping or Neufchatel cheese.
