Recipe Substitutions and Alternatives

In Place of: Instead Use this Substitution or Alternative:
1 cup cheese 1 cup fat-free or reduced fat cheese, or 1/2 cup fat-free and 1/2 cup reduced fat cheese mixed
1 large egg or 2 egg whites or an egg substitute
1 medium egg 2 egg whites or an egg substitute, 1/4 cup
1 cup of shortening or butter 1/3 cup olive oil or 1/3 cup vegetable oil or 1/2 cup margarine or a margarine or butter substitute appropriate for baking and pan frying (read labels)
1 tbsp. regular mayonnaise 1 tbsp. fat-free, or light mayonnaise or 1 tbsp. fat-free plain yogurt
(1-oz.) unsweetened baking chocolate 1 tbsp. Vegetable oil (such as Canola) plus 3 tbsp. of cocoa
Sugar Sugar substitutes, (read labels when cooking with the sugar substitutions-- to see if the sugar substitute you have chosen is suitable for cooking or you could use brown sugar, molasses or honey in some cases.
Chocolate chips, Peanut Butter chips,

Butterscotch chips

Omit chips or use the mini chips or reduce chips or in place of chips add some uncooked oatmeal, walnuts, pecans or raisins.
1 tsp. salt Omit salt or use 1/2 tsp. salt
1 cup sour cream 1 cup fat-free or light sour cream, could use 1 cup fat- free plain yogurt or fat-free buttermilk
1 cup heavy cream 1 cup Fat-free evaporated (canned) milk
1 cup milk 1 cup fat-free, or 1% milk or 1 cup fat-free (canned) evaporated milk or half fat-free & regular milk
1 cup chicken, dark meat 1 cup chicken, white meat -- don't eat the skin
1-lb. ground beef 1-lb. extra-lean 93% ground beef or 1-lb. extra-lean ground turkey
1 tbsp. cream cheese 1 tbsp. fat-free cream cheese or 1 tbsp. Neufchatel cheese
