  Tomato-Basil Bruschetta
   
  Ingredients:
 

4 slices Garlic, Texas Toast

4 Tbsp. Fat-Free, shredded Mozzarella Cheese

4 Tbsp. Fat-Free, shredded Cheddar Cheese

1 large vine-ripe tomato, diced

1 small sweet onion, chopped

2 -3 fresh basil leaves, or 1 tsp. dried Basil flakes

1/4 tsp. dried Marjoram

1 tbsp. Olive Oil

Dash of salt

 

  Directions
 

Prepare vegetables. Combine tomato, onion, herbs, olive oil, and salt in medium size bowl.

Toast-Texas style Garlic Bread in oven according to package directions or  Preheat oven to 425 degrees. Place Toast on baking sheet  on Middle Oven Rack. Bake 5-6 minutes or until toasted. Turn over while baking, to bake until golden brown on both sides. Once toasted, spoon tomato mixture on toast slices and sprinkle cheese over the top.  Return to oven and bake an additional 1-3 minutes, or until cheese has melted.

*Note: Toasting the bread is important to prevent soggy bread. If you attempt to skip the toasting part, the desired consistency will not be reached.
